A DIFFERENT ROUTE
TO HIGH-PROTEIN CRISPNESS.
Engineering the transformation of protein-rich food matrices into a controlled crispy architecture.
STRUCTURE FIRST.
PROTEIN AT THE CORE.
What problem does the technology address?
High-protein snack R&D often faces a structural challenge: a material may meet a nutritional target yet become too dense or hard for the intended eating experience. Our objective is a thin, light, crisp format built from a protein-rich matrix.
Why is crisp structure difficult?
Traditional expanded snacks frequently depend on starch-rich formulations to generate desirable expansion. Changing the protein system also changes the material’s response to water and processing. Expansion, structural stability and eating quality must be considered together.
Read the starch–protein perspective →FROM MATRIX TO STRUCTURE.
Our platform combines controlled forming, energy transfer and moisture management to create a crisp snack architecture from protein-rich food matrices.
The objective is not simply to increase protein content in an existing snack. It is to rethink what can become the structural foundation of the snack itself.
This is a conceptual overview. Material-specific feasibility and implementation are discussed through a defined evaluation process and appropriate confidentiality arrangements.

NOT JUST A CONCEPT.
ALREADY DEMONSTRATED IN FOOD.
Chicken breast matrix
Thin, crispy snack format
Commercial product: Shanneng Matrix chicken crispsOur current commercial demonstration uses chicken breast as the primary structural matrix.
Rather than using protein simply as a nutritional addition to a conventional starch snack, the protein-rich matrix itself becomes the foundation of the final crispy structure.
The result demonstrates the platform’s ability to transform a high-moisture protein matrix into a thin, shelf-stable crispy snack format.
This demonstration applies to our current chicken-based product. Compatibility, shelf life and performance of other materials require separate evaluation.

NEW QUESTIONS TO EXPLORE.
Chicken is our commercial proof of platform. Plant protein, mycoprotein and other matrices are potential applications that need their own evaluation. A result in one matrix does not establish performance in another.
